Kyocera manufacture the world’s leading brand of ceramic knives. Made in Sendai, Japan since 1984.  The benefits of ceramic knives are well known. Ultra hard blades that stay sharp longer than steel knives and inert blades. The primary material is Zirconium, a material that is only surpassed by Diamond in hardness. Ceramic knives never really need to be sharpened.

A second benefit of ceramic knives is their inert property. Ceramic knives will not rust, or affect the taste of food, or transfer smells between different foods. Apples will not brown when cut, and no metallic hint is left on delicate foods.

Ceramic knives should be well looked after, they can be brittle and will break easily if dropped. Whilst the knives will be sharp, the knives cannot be sharpened as well as a steel knife. resharpening can be done by use of a diamond sharpener.
